Laguiole (pronounced "Lie-yole"), a small French mountain town about 350 miles south of Paris, is famous for its cattle, its cheese, and its cutlery.
The original Laguiole knife was made by ironsmiths in 1829, as a farmer's tool, and was eventually refined into the Laguiole steak knife used by many famous French restaurants as the meat-cutting tool of choice.
The Laguiole with its gentle carving blade, the elongated pistol grip handle, and a small bee set into the bolster has been the focus of many stories passed down from generation to generation. The bee is cut out of steel and decorates the knife spring. The bee originally came from an award following a courageous act during a campaign under Napoleon I, when the imperial emblem was given a reward.
